Real Food, REAL Simple: Sweet Potato Wedges

This super-simple recipe is great for any time of the year.  In the summer, it's especially great when accompanying anything cooked on the grill or as a salad's more substantial side dish.  These are a more nutrient-dense alternative to the insulin-spiking white potatoes.  Be sure to opt for actual SWEET POTATOES rather than yams (yes, there IS a difference), as they contain many more nutrients.

Ingredients:
2 large sweet potatoes, scrubbed well & cut in "steak fry" wedges (kind of like you would make apple slices)
1 Tablespoon olive oil
Chili powder
1/2 teaspoon salt

Directions:
Preheat oven to 375 degrees
Place sweet potato wedges into large mixing bowl
Drizzle olive oil onto sweet potatoes
Sprinkle chili powder & salt over all, using as much chili powder as you like, toss well to coat thoroughly
Roast in single layer in shallow baking pan in 375 degree oven for approximately 45 minutes, turning every 10-15 minutes, until done.
Makes 4 servings
