Carrot Ginger Smoothie



I'm head-over-heels in love with my new Vitamix blender! One of my favorite past-times is experimenting with different fruit and veggie combinations to create some nutritious and delicious smoothies that are beautiful, too. This carrot-ginger smoothie does not disappoint in any of the categories!

Ingredients:
2-3 raw carrots, peeled and cut in chunks (or shredded, depending on the power of your blender)
1 small/medium apple, cored and cut in chunks
approximately 1-2 teaspoons fresh ginger
1/2-1 lemon, peel and pith removed (depending on size of lemon, and amount of tanginess you desire)
4-6 slices of frozen peaches
3-4 frozen pineapple chunks (optional)
6 large ice cubes
1/2 cup water

Directions:
Place all ingredients into blender and puree until smooth. You may need to add more water. If your blender does not adequately puree the carrots, you might want to gently steam them next time.

Makes one large or two small servings. Also great for popsicles!
