After returning from a run yesterday afternoon in the heat and humidity, I knew that I needed something to help refuel my body, wanted something really cold, but could not stand the thought of something syrupy-sweet. Many people crave tart lemonade in the summer, not realizing that the tartness and certain properties of lemons are actually cooling and cleansing to our bodies. I wanted something lemony. I am also on this kick of really trying to eat a TON of greens every day and have been looking for ways to add them in at every opportunity possible. Those are the factors that went into the inspiration for this (plus, it's super-easy and I was able to throw it together in about 3 minutes). Don't be put off by the color of this smoothie. It actually tastes more like a mildly sweet lemonade.
Ingredients:
2 large fists-full of spinach leaves (cleaned, raw)
1 lemon or lime, peel removed
frozen peach slices (NO SUGARS/SWEETENERS ADDED) - the equivalent of 1/2 to 1 peach
1/3 cup frozen pineapple chunks (NO SUGAR/SWEETENERS ADDED)
1 Granny Smith apple with peel, diced
6-8 ice cubes
1/2 cup of water
Directions:
Place all ingredients into immersion blender cup, or regular blender. Blend until everything is finely pureed. Use more or less water, depending on desired consistency. This smoothie tastes fresh, light and very similar to a frozen lemonade!
