Pumpkin Pie Smoothie
It's soooooooo ridiculously easy to make this creamy smoothie, you'll never visit the "fast-places" to sacrifice your money or your waist-line for the yummy taste of pumpkin and spice again! In addition to the great taste and texture, this smoothie is giving you a great dose of immunity-boosting vitamin A, and muscle-friendly potassium and magnesium. It's also DAIRY-FREE!
In a blender, combine:
1 frozen banana*
1/3 cup pumpkin puree (I like to use canned pumpkin for ease, but you can puree fresh ones that have been boiled or baked if you've got them)
1 cup almond or rice milk
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
Puree until smooth. Serve immediately. Makes one serving.
*I like to slice my bananas, then freeze them in a single layer by laying a sandwich baggie on it's side, in single-serving-size portions
