Experimenting in the kitchen the other day, I came up with a smoothie that can give your favorite banana split a run for the money!
This smoothie combines the nutritional benefits of beets and kale with the taste indulgence of a banana split - minus the guilt, bloating and lethargy that often come with the latter.
In blender, combine and puree until smooth:
1 small red beet (raw, peeled, chopped)
1 handful of kale (or 2 large leaves - stalks are fine to include)
1 small apple (washed, chopped)
1 small banana
1/2 cup frozen pineapple
1/2 cup frozen strawberries
1 Tablespoon almond butter
1 Tablespoon cacao powder (it's raw cocoa - FULL of antioxidants)
1/2 cup ice cubes
1 cup water (may need more or less, depending on texture)
1 Tablespoon flaxseeds (optional)
1 scoop protein powder (optional) *note: add this after you've blended your smoothie, by blending for just a second, otherwise your smoothie may be too "fluffy"
Makes one large or two smaller smoothies. I often make a large one for myself, but save a little in the fridge for later in the day.
