Asian Dressing

My daughter came back from Australia and Nepal last year with a great (yet simple) way to dress noodles, "Asian" style.

In a small mixing bowl, combine:
1/4 cup orange juice
some soy sauce (I use low-sodium)
a teaspoon (or two) of Chinese Mustard
a dash of rice wine vinegar
a spoonful (more or less, depending on heat preference) of chili oil
a few teaspoons of freshly grated ginger
(adjust ingredient amounts based on preferred taste and amount of food being 'dressed').

Whisk ingredients together and toss on rice noodles, soba noodles, brown rice, steamed greens, etc.

One of the easiest ways to make a one-dish meal is to lightly saute some pre-packaged "cole slaw mix" (cabbage & carrots) with a little onion and garlic, throw in some cubed tofu just long enough to heat the tofu, then toss with the sauce & noodles above.
