Tofu Scramble

One of the simplest ways to prepare tofu is “Tofu Scramble”.  It is a great breakfast dish, but can be eaten any time of the day.  This makes a really good sandwich when placed inside a lightly toasted pita and topped with a little shredded cheddar cheese.  Enjoy!

Ingredients:

a little oil (Canola works well for this, since it is fairly flavor-neutral)

any vegetables you would normally put in an omelet

1 pkg. Tofu (I really like “Mori-Nu” Silken Tofu in “Firm” texture – very “egg” like)

Turmeric

Directions: 

Heat oil in skillet and add vegetables and sauté.  

Crumble tofu by hand, into skillet, being sure to break into scrambled-egg-sized pieces.

Sprinkle turmeric onto tofu (usually about a teaspoon full) until the desired color (note:  turmeric does not really add flavor, it’s purpose is to make this look like scrambled eggs, but it does happen to be pretty good for you, too).

Heat just long enough for tofu to become warmed through.
