Beets? Think Outside The Box ... er Jar?


Beets evoke some strong sentiments from people.  They either love 'em or hate 'em.  But when most people think about beets, what comes to mind are the mushy, salty pickled beets that our mothers heated up after pouring them from cans or jars that had sat on grocery store shelves for who-knows-how-long.

Reconsider the beet.  Raw beets are a great source of vitamin C and blood-building iron AND have healing properties that can correct digestive problems when eaten daily over a period of several days.  Seriously.

Raw beets don't have a strong flavor.  They taste similar to a carrot, just not as sweet.  The next time you're making a veggie tray, consider cutting some raw beets into sticks the night before.  By cutting them in advance and allowing them to dry out a little (while storing them, sealed in the refrigerator), the juice that can make your hands look like you've been tie-dying t-shirts for weeks will have dried up enough that you can eat them very neatly.  Pair beet sticks with hummus as you would any other raw veggies and see how surprised others are when they taste this colorful, nutrient-packed unique addition to your spread.
